One thing that often comes up when introducing Wine on Tap to customers is the deposits required on Steel Kegs.

At first it seems a lot of money to put forward as a deposit but in the grand scheme of things it is nothing more than a good investment.

When using bottles, bag in box and plastic kegs (Key Kegs) there is a high chance of wastage from breakages. Once the breakages come, then the loss of profit follows. You can not undo time.

Using Steel is an investment in your profits as there is a very slim chance of the steel splitting and leaving you to mop up what could have been your profits.

Look from another perspective. We all have car insurance and at the best of times it can be at around a Third of the amount of what the car is worth. We insure our cars and other personal belongings to prevent a major loss encase we have an accident, resulting in a financial payout which would have been worse if we did not have the insurance.

So when you look at a keg of wine that cost you say £200.00 but the retail value of that keg could be within the region of £600.00+ then having the extra protection of steel is well worth it. What would you rather do, opt for a plastic keg (Plastic is the Enemy of wine anyway) a bottle etc which has a chance of being broken, or pay a small deposit to protect you profits, products and your business interests.

Problems with Corks?

Just the other day at our local Restaurant, I was talking the the Manager about how they store their wines and about the sediment appearing in one of our wines.

He told me that they have little space for storage and have been struggling with one wine in particular mentioning that the corks are continually breaking in the bottle. Which was a real issue for him as he had to be careful not to serve a wine with cork pieces in it plus the service time had been prolonged due to this. And if the cork had broken down completely into the bottle, then it would end up effecting their profits as the bottle would need to be discarded.

I preceded to inform him that there is a way to prevent the corks breaking in their bottles, which of course is by turning the bottle on its side and every now and then rotating it to prevent the cork from drying out. But then i said there is a better way to combat all three of his issues, Corks Breaking, Storage Space and Service times. Now if you have seen my blogs before or are aware of what we specialise in then you know whats coming next. If not then i am glad you have seen this post.

The answer to his problems is quite simply, Wine on Tap. Wine on tap (from stainless steel kegs) gives the consumer a fresh glass every time with no corks in sight. Lower Sulphite Content = Fresher Wine

Sulphites is an inclusive term for sulfur dioxide (SO2). SO2 is a preservative used in wine making because of its antioxidant and antibacterial properties. SO2 plays a very important role in preventing oxidization and maintaining a wine’s freshness when stored in Bottles, Bag n Box or Keykegs (plastic Kegs)

The objective is to prevent wine going off before it can be sold. So this additive changes the way the wine tastes and is not the ideal way of keeping wine fresh before the consumer tastes it.

Stainless Steel Kegs have been used for half a century by Vineyards to keep their wines fresh before bottling. So if we use Stainless Steel kegs instead of Stainless Steel Vats then the wine will not change its freshness as oxygen can not perforate. Preventing oxidization and maintaining its freshness. Doing what the Sulphites do, but much better and with fewer additives.

How to Eliminate the Number 1 Enemy of Wine!

Oxidization is the number one enemy of Wine and a knock on effect for your profits.
When serving a glass of wine in a bar / restaurant from a bottle, it is not uncommon that the wine tastes different from when the bottle was first opened. Due to oxidization you never get the same consistency throughout.
If you wish to be consistent with serving wine and wish to remove the cost of having to pour the rest of the bottle away due to oxidization, then what we can offer you is exactly that.
Stainless Steel (SS) is used by vineyards throughout. This is because SS does not let oxygen penetrate the layers, keeping the wine fresh until the bottling stages. Normally Vineyards use 24,000 litre size vats to store their wine.
The way we store our wine is exactly the same, although not in 24,000 litre vats. We store our wines in 20 litre kegs which hold the equivalent of 26 bottles. This way we keep oxygen out, giving consistency throughout the kegs, the first drop is always as fresh as the last.

Sediment in my Glass!

Now i am sure most people who drink wine will have come across this in the bottom of their glass. But its not a nice thing to see let alone be surprised by it working its way down your throat before you new it was there.

In one of our local watering-holes, we were there enjoying a few glasses of the house wine and suddenly we saw the intruders. Over the the few hours that passed there was a 100% rate of sediment in the bottom of every glass, something that has never happened before.  Even changing the wines, there were still some little bits at the bottom. After swallowing some of the sediment before knowing it was there, was the worst part as it was not the nicest of  sensations.

There are many types of Sediment that can form in wine but this should not have been an aging sediment as it was a non vintage wine. Lees should be filtered out several times by the winemakers before the bottling process as well. So the only thing i could put it down to was that the wine had been processed in traditional European Methods where they don’t rely on the Modern Cold Stabilization and Filtration Processes which hinder the Tartrate Development.

In a Modern world we should be concentrating on making the consumers experience a better one, and sediment in a glass is certainly one that can be reduced / excluded.

Chateau Haut Brion, a legendary Bordeaux producer, listened to Peynaud and in 1961 was one of the first wineries in the World to have Stainless Steel Tanks installed.

Stainless Steel offered many benefits from controlling the fermentation temperature, never adding to the taste of the wine unlike Oak barrels, to preventing oxygen from penetrating and starting the oxidization process.

Many On-Trade businesses have costs when it comes to wine. The two main contributors are Recycling Costs and Wastage Costs.

Take Wastage costs first. Its not the cost of the open bottle that has oxidized, its the loss of profit which is the cost. If the bar was to have 2 glasses of 175ml left in a bottle which was not used for several days and they were charging £4.00 per glass they will have just lost £8.00 due to oxidization. The cost of that bottle will have been somewhere in the region of £3.50 to purchase, but the loss of those two glasses is what is affecting the bottom line not the loss of the cost.

Also many businesses have to pay for the recycling of empty glass bottles. While it is true they will still have these costs for coke bottles, water bottles and beer bottles, the charges are measured by weight. So the fewer bottles they throw out the more of their profit they hold onto. Maybe to give their staff an increase in salary or to put the funds into redevelopment to give the customer a new experience.
